Made by Mademoiselle de Margaux, these chocolate covered cherries - La Guinette - are made from slightly tart cherries of the Prunus Cerasus Oblaginska variety, commonly known as morello cherries. The pitted cherries with stems intact are dipped in Armagnac and then coated in dark chocolate. The fruitiness of the cherry and the Armagnac's warmth are captured by the dark chocolate coating made with pure cocoa butter. This is what chocolate covered cherries were always meant to be.
